Who has time to fix a 4-course meal EVERY night? I know I don’t. I’m guessing you don’t either! Every once in a while, yes, but on a daily basis? Can you imagine yourself working hard all day and coming home to prepare a gourmet meal for a family of 4? Your reality may not be like that (mine surely isn’t), so that’s why today I am sharing a recipe I found through an app. It’s a quick, easy meal (I think) the whole family will enjoy. Eggplant Slices paired with a basic recipe of couscous. Keep reading to see how I made this delicious dish.
What you’ll need:
Shredded Mozzerella (about 3/4 cup or less)
Salt & Pepper
Preheat your oven to 465 F and oil your favorite baking sheet.
Wash and dry tomato and eggplant. Slice into circles. The size of the slice is up to you!
Place eggplant slices on tray and season with your favorite spices. I chose salt, pepper, and garlic.
Place tomato slices on top of the eggplant and season with your favorite herbs. I chose fresh basil and parsley.
Sprinkle the shredded mozzerella on top.
Place in oven.
Bake for 10-15 minutes.
Follow the instructions on the package.
I added butter, garlic powder, fresh parsley and basil, and salt to taste.
See…pretty simple, but it’s a quick, easy meal that will be devoured quickly! I will note that the eggplant was a bit watery, but this is normal from what I hear. That was my first time eating eggplant, and I must admit; I LIKED IT! Next time, I am going to make a breaded version of this eggplant! Would you like me to share the results?
